Imogen is turning 6 tomorrow.  I made these cupakes for her to take to her kindergarten class this morning.  I would have bought them but couldn’t find anything that doesn’t have ‘possible’ tree nut exposure.  I am sure mine were better anyway.

(Oh, and maybe a little drinking).

What a fun night!

Prepare tray with 12 liners sprayed with olive oil or canola oil.

Preheat oven 350

9 lrg eggs in 4 cup measuring cup. Add milk (skim milk) to 3 make three cups. Beat.

Spinach, onion, peppers ( what ever you have kicking around). Saute quickly in pan. Season to taste.

Place veg mix in evenly in the bottom of  paper cups.

Pour in eggs.

Pinch of grated cheese in each cup. Parmesan is my fave.

Half cherry tomato place on top of cheese.

Bake until set.

Let cool and individually wrap. Refrigerate.

Remove wrap and paper liner and micro in the morning  for 40 seconds (?) depends on your micro.

Grilled Romaine lettuce, grilled prawns, red peppers, red onion, avacodo and feta cheese.  Served with grilled asparagus, zucchini.   I made the dressing yesterday to go with the salmon I baked. It is LF ricotta cheese, plain yogurt, mayo (just a smidgen), garlic, pickle juice, a chopped up pickle and a little bit of EVOO.  Yummy.
